  粤菜十大名菜

  一、阿一鲍鱼

  阿一鲍鱼的烹饪厨艺无不渗透着中国优秀的传统食文化内涵。制作阿一鲍鱼的杨贯一先生也因在国际上弘扬中国美食文化有突出成就而赢得众多荣誉,被国际美食界公认为"鲍鱼大王"、"美食大师",并荣膺"国际杰出风云人物"称号。和鱼翅一样,是说到粤菜绕不过的几种高档食材之一,作为名菜,明清时期就被列为八珍之一。滋阴补阳,补而不燥,营养价值极高。粤菜多使用干鲍鱼,阿一鲍鱼烹煮简单,美味诱人,成为本次“首届中国粤菜峰会”评选粤菜十大名菜。

  二、广州文昌鸡

  广州文昌鸡是粤厨传统名馔“金华玉树鸡”的姊妹菜。最开始的时候用的是甚有名气的海南省文昌县出产的鸡。据悉,当年广州酒家派出数位名厨前去当地考察,品尝后发现文昌鸡肥美肉厚,名不虚传,美中不足的是鸡骨过硬,食用不便。经过一番研制,将其去骨斩件,拼以金华火腿、珍肝、时令菜远等,食来皮爽肉滑,别具风味。因鸡来自文昌县,广州酒家又刚好坐落在文昌路,“广州文昌鸡”由此得名。

  三、明炉烤乳猪

  广东的烧乳猪有两种方法,一是烧成光皮的,用火较慢,烧时涂油较少;二是将其烧成化皮的,以旺火烧,过程中不断涂油,成品皮色金黄,芝麻般的气泡均匀分布,表层大小一致,皮层更为酥脆。烤好的乳猪要用刀将皮片出(不带肉),将每条皮片成8块,共计32块,乳猪放在盆中,猪皮覆盖在猪身上,然后配千层饼、葱球、甜酱和白糖等两小盘一起吃,风味独特。

  四、新龙皇夜宴

  本道菜肴,选用3斤左右澳大利亚龙虾,龙虾肉配鲜百合、芦笋等炒成虾球,龙虾爪椒盐,装盘时,仍按龙虾原样摆放,虾球摆中间,爪脚放两边,龙虾头尾保留,看起来就像是龙腾四海状。新龙皇夜宴,与一般炒龙虾球没头没尾显著不同的是,是有头有尾,而这正吻合顺德人有始有终的处事风格。

  五、半岛御品官燕

  广州半岛明珠酒家制作的“半岛御品官燕”,成为本次“首届中国粤菜峰会”评选粤菜十大名菜。官燕采用自选模式,分别加入五彩:红枣汁、椰汁、木瓜汁、杏汁、香芋汁各适量,同五彩汁一起上桌,又称“五彩燕窝”,“锦绣燕窝”等等。一道菜就是一个“自选超市”,有客人依个人爱好各取所需,充分体现出人性化服务精神,这是这道菜受青睐的原因所在。

  六、清蒸东星斑

  东星斑肉质丰满,鲜美嫩滑,肉色洁白,再加上蒸鱼豉油使味道相得益彰,是粤菜生猛海鲜制作的代表之一,集中突出了粤菜清、鲜、嫩、滑、爽的要义。真正鲜活的清蒸鱼类,端上桌时,鱼鳍舒张,肉质片片分离,绝不黏腻。

  七、挂炉烧鹅

  在清朝后期,广东的烧鹅已经声名远扬,如今广州大街小巷的烧味店都少不了它的身影。烧鹅之“鹅”最好选用个头小的清远黑鬃鹅,肉质细嫩,味道鲜美,以特制的酱料涂匀光鹅全身后,以烧鹅环吊起,放入微火的烧烤炉中烧至表皮干紧,然后风干。配烧鹅的佐料酸梅酱很有讲究,如果你时间充裕,正好要去香港走一遭,那么建议去尝尝镛记的烧鹅。镛记烧鹅成为“首届中国粤菜峰会”评选粤菜十大名菜。

  八、生拆蟹肉烩海虎翅

  鱼翅是高档粤菜的重要食材。红烧大群翅原是大三元的传统招牌菜,据说在上世纪二三十年代,要花上60银元才能吃得上这道菜,选用老虎鲨等大鲨鱼的鱼翅作为原料,经浸发、滚煨翅等多道工序而成,出品翅针透明软化,味道鲜美、韧中带脆、浓而不腻。如今的广州,鱼翅的做法可谓日见纷呈,新近的粤菜峰会上广州琶洲香格里拉夏宫的生拆蟹肉烩海虎翅作为鱼翅的代表。

  九、雁南飞茶田鸭

  在2009广东国际旅游文化节之“首届中国粤菜峰会”上,经组委会提名和专家评审团审议,围龙食府出品的“雁南飞茶田鸭”入选“粤菜十大名菜”。

  十、潮州卤味

  潮州菜的重要组成,其卤水用细猪骨、梅肉、老鸡、火腿、瑶柱,与八角、桂皮、香叶、鲜香茅、甘草、黄姜、罗汉果、丁香、蒜头、红葱头、西芹、红萝卜、洋葱及老抽、鱼露、鸡精、花雕酒、玫瑰露酒等一同熬制而成。然后,将家禽家畜或水产品等放入其中,加热卤制,形成各种卤味,如卤水鹅、卤水鸭、卤水鸡杂等,口味鲜美。潮皇食府出品的“潮州卤味”成为本次“首届中国粤菜峰会”评选粤菜十大名菜。

  肉类:

  白切鸡,三杯鸡,酱油鸡,烧肉(也就是烤猪),酸梅鸭,梅菜扣肉,香芋扣肉,蒸排骨,咸菜蒸瘦肉。

  点心:粟米饼、干蒸,去酒楼喝早茶就能吃到

  汤类:广东褒汤最有名啦,滋补又好喝,党参炖乌鸡,塘虱(鱼类的一种)黑豆汤,猪骨莲藕汤,猪骨菜干(白菜晒干以后)汤。

  粥类:皮蛋瘦肉粥、烧骨粥(就是烤猪排骨)、鸡粥、鱼片粥、菜干粥

  今天我就分享一道在粤菜餐厅最受欢迎的一道菜:蜜汁叉烧肉的详细做法。

  去到粤菜餐馆,广式叉烧肉肯定是肉食控们的首选,叉烧肉虽然好吃,但是价格看着心在滴血啊!那我今天就教你只用餐馆价的三分之一的价格,就能在家烤出双倍美味的叉烧!只要家里有烤箱,也是可以做出和餐厅味道差不多的蜜汁叉烧!

  广式蜜汁叉烧做法

  材料:

  猪二层肉500克,叉烧酱适量,生抽,老抽,料酒,白糖,蚝油,姜丝,蜂蜜

  1.将猪二层肉约500g,洗净后抹干水,加入一勺料酒,撒上姜丝,加入两大勺叉烧酱,加入一勺生抽,一勺老抽,加入一勺蚝油,适量糖,搅拌均匀后放入保鲜盒密封,放入冰箱冷藏腌制约24小时,其间多次拿出来翻拌下使肉更入味

  2.腌制好后,把烤箱提前预热下。将腌好的肉放入铺了锡纸的烤盘中,浇上少许腌肉的酱汁

  3.送入烤箱190度,上下火中层烘烤约35分钟

  4.分别在10分钟后翻面一次,20分钟后取出刷上一层蜂蜜,30分钟时再刷上一层蜂蜜,烘烤……

  5.完成后取出,温度稍微降后即可切片食用

  注意事项

  1、猪肉最好选梅头肉(即猪后肩至腰部的肉)或猪颈肉(即猪前腿至猪下巴的肉)。梅头肉很嫩,猪颈肉瘦中夹肥。喜欢吃肥叉烧,所以选用的是猪颈肉。
